Stone vs Steel
Stones are cheaper but fragile. Steels transfer heat faster and are indestructible. Both work great.
Seasoning
Steels benefit from light oil coating when new. Stones don't need seasoning.
Cleaning
- ✕ Never use soap – it absorbs into the material
- ✕ Scrape off stuck bits when cool with a bench scraper
- ✕ Wipe with damp cloth if needed
- ✕ Burn off residue at high heat
Avoiding Cracks (Stones)
Never put cold stone in hot oven. Never run under cold water when hot. Thermal shock is the enemy.
Storage
Keep in oven permanently. Acts as heat reservoir for all baking.
