About the Style Comparator
Most style decisions come down to three numbers: how wet the dough is, how long it ferments and how much of that time you have to be in the kitchen. The comparator puts those numbers for any two styles next to each other instead of making you read two recipes.
Each side shows hydration and salt as baker's percentages, total time in hours and a difficulty rating. The radar chart adds the softer criteria, flavour, digestibility, error tolerance, hands-off time and speed, so a style that is slow but forgiving reads differently from one that is fast but unforgiving.
How it works
